Hawaiian and Veggie Pizza
By no means does this recipe fall into the category of gourmet, but for a week night I think it’s a valiant effort. After eight hours at work the last thing anyone wants to do is slave away for hours in the kitchen. The solution: these quick, easy, healthy, tasty pizzas, made with whole-wheat english muffins. Whole-wheat flatbread is also a yummy, easy choice.
Pre-heat oven to 425
Cut english muffins in half and place on a baking sheet. Spread a good tbsp of pizza sauce (I used Gattuso), or olive oil and herbs -whatever you have in the cupboard.
Now it’s chopping time. For toppings, use whatever you have available, but here’s what I used:
Veggie Pizza:
Diced onion
Sautéed zucchini with olive oil and garlic
Chopped sun-dried tomatoes
Broccoli florets
Grated old cheddar cheese
Evenly spread the onion and zucchini over the sauce. Add the grated cheese and top with the broccoli and sun-dried tomatoes.
Hawaiian Pizza:
Diced onion
Diced pineapple
Smoked deli ham – roughly chopped
Grated old cheddar cheese
Evenly spread the onion over the sauce. Add the grated cheese and top with the pineapple and ham.
Cook for 15 to 20 minutes. Cover with aluminum foil if the veggies start to brown too much.
I made 12 pizzas, 6 of each and lucky me I managed to save a few from my always hungry husband for my lunch tomorrow.
