Pan-fried tilapia with avocado & strawberry salsa

Some dishes are deceptively simple to make – this is one them!

First, squeeze some fresh lemon over a fillet of tilapia. Rub in a good amount of cumin and dashes of fresh ground pepper and onion salt. In an iron skillet (or whatever you have – preferably non-stick), heat on medium-high enough olive oil to cover skillet. After a minute or so place your tilapia fillets in the oil. Cook for 3-5 minutes on both sides. They should be nicely browned and full of flavor.

While the tilapia is cooking, plate a handful on mixed greens and dress with olive oil/ balsamic vinegar.  In another bowl, combine diced avocado, and fresh diced strawberries with a dash of olive oil, balsamic vinegar and salt and pepper to taste.

Lay the cooked tilapia over the salad and generously spoon the avocado and strawberry salsa on top. Who knew avocado and strawberry would go so well together? Mmm mmm.
