Citrus arugula salad
After a weekend of indulgences (TCBY vanilla frozen yogurt smothered in caramel and score bits on Saturday night and pastries Sunday morning), I’m really feeling the need to eat a little lighter. This salad is yummy, light, and fresh! And oh so simple.
Mix arugula salad, half a pink grapefruit (chopped), diced cucumbers, chopped pistachios and chopped havarti cheese. On to the dressing: combine olive oil, fresh squeezed orange juice, maple syrup, apple cider vinegar, dijon and fresh pepper.
