Red cabbage slaw
Aren’t dishes you can whip up in minutes great? I came home from work today absolutely famished and wasn’t in the mood to spend more than 10 minutes preparing dinner – evenings are such a precious time. They seem to go by so quickly, then back to bed and work again. My goal: to spend these few hours between work and sleep in a relaxing way – a stroll with my pup, a cuddle session on the couch with the hubby, or indulging in a silly t.v. show or book.

Ingredients:
3 cups of finely chopped red cabbage
3 medium sized carrots (shredded)
1 tart green apple (chopped)
Dressing:
2 tbsp mayonaise
3 tbsp olive oil
2 tsp dijon
1 tsp apple cider vinegar
4 tsp white wine vinegar
Salt and pepper (to taste)
Shake dressing until smooth and creamy and mix with the cabbage, carrots and apple – how easy was that? ~ Enjoy

The colors in this are just beautiful! I totally agree with you, quick fixes are so nice, especially when you are able to do things you’d rather be doing or don’t get a chance to do as often.
