Apple nut cake

It’s a chilly, rainy day here in Montreal – perfect weather to enjoy a warm, yummy slice of apple nut cake. A mish-mash of a few recipes and personal preferences, this turned out even better than I thought it would. Love it when kitchen experiments turn out so well!

1 1/2 cup flour
1 1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp nutmeg
1/2 tsp salt
1 1/2 cup finely shredded apple
1 beaten egg
1/2 cup sugar
1/2 cup brown sugar
1/4 cup vegetable oil
1/2 cup toasted chopped walnuts

1/4 cup brown sugar
1/2 tsp cinnamon
2 tbsp melted butter

Preheat oven to 350. Grease a 8 x 4 inch bread loaf pan.

In a medium sized mixing bowl, combine flour, cinnamon, baking soda, baking powder, nutmeg and salt. Make a well in the centre of the mixture. Set aside.

Combine shredded apple with beaten egg, sugar, brown sugar and vegetable oil. Add the apple mixture to the flour mixture and mix until just combined. The batter will be lumpy. Fold in the toasted walnuts.

Spoon batter into the prepared pan and bake for 35 minutes. Take out of the oven and spread the glaze over cake. Put back in the oven for another 5 minutes, or until a toothpick comes out clean. Enjoy!

  3. Mm, that looks delicious. Does the kind of apple you use make a difference? I have some pink lady apples here waiting for inspiration..

    • Thanks! I actually used pink lady apples. I found it easier to shred a slightly harder apple. I tried initially with mcintosh apples, but they were too juicy!
