Summer salad
This yummy, hearty salad is full of my favorite things. Avocado, sun-dried tomatoes, feta…mmmm mmmmm. Such a simple salad to whip up, but so filling and delicious!
1 english cucumber quartered and chopped
1/2 small onion (roughly chopped)
1/2 medium brocoli (chopped)
1/2 cup of oil soaked sun-dried tomatoes (roughly chopped)
1 ripe avocado (chopped)
1/2 cup of crumbled greek feta
1/2 a loaf crusty olive oil drizzled baguette (large chunks)
For the crusty baguette, slice half a loaf of baguette and drizzle olive oil over each side. On a baking sheet layout baguette and bake until golden brown on each side (about 10 minutes @ 350 – flipping halfway through).
Dressing:
Olive oil
Red wine vinegar
(3 parts oil to 1 part vinegar)
1tsp dried oregano
Salt and pepper to taste
