Cinnamon blueberry waffles

Last weekend was my hubby’s 30th birthday and I know the way to his heart is through his tummy (mine too actually!). So, a yummy breakfast to start the day was definitely in order – and what better than warm blueberry waffles?! These waffles are so delicious and pretty simple too!

In just a couple more weeks our little boy will be here and I just couldn’t resist buying the hubby this adorable onesie.
Ok, back to the waffles…
Sift together the following dry ingredients:
2 cups of flour
1tsp. baking soda
1/4 tsp salt
2 tbsp sugar
1/2 tsp cinnamon
In a separate bowl mix:
2 beaten egg yolks
2 cups of milk
1/3 cup melted butter
1 tsp vanilla
In a separate bowl beat 2 egg whites until stiff peaks form.
Make a well in the dry ingredients and add in the milk mixture. Combine in a few swift strokes – the batter will be lumpy. Fold in beaten egg whites and 3/4 cup of fresh blueberries until just combined.
Now, time to make some waffles! Heat up the waffle maker and pour 1/3 cup of the batter into the center of each waffle plate. Close the cover and cook for about 3-4 minutes until golden.
The recipe makes about 16 waffles, so if you don’t devour them all they can be wrapped, frozen and popped in the toaster for a quick and easy breakfast.
…oh, and don’t forget to pile with fresh berries and drown in pure maple syrup (none of that Aunt Jemima stuff please!). Enjoy!

Thanks! I use the Canon Rebel XSI – my new baby. I just love it. Really easy to use and it takes lovely portraits. I promise some healthy dishes soon:) I’ve got only a few more days until I become a mom and then I’ll have some baby weight to lose – no more waffles for me!
