Ginger Snaps

You can’t have Christmas without ginger snaps! Well, you can – but why!? For me, this is the quintessential Christmas cookie and my mom makes them every year. I should really make these more often – not just at Christmas. Why do we only make certain great desserts on special occasions – like pumpkin pie only on Thanksgiving? I love pumpkin pie. Why don’t I make it in July?

Ingredients:
3/4 cup shortening
1 cup sugar
4tbsp molasses
1 egg
1 tsp salt
2 cups flour
2 tsp baking soda
1 tsp cinnamon
1 tsp cloves
1 tsp ginger

Mix shortening with sugar and molasses. Add egg and dry ingredients. Mix together and roll into walnut sized balls. Roll in sugar. No need to flatten, they’ll do that on their own. Bake for 8-10 minutes at 375.  Makes 40 -45 cookies. Enjoy (all year round)!

  3. Yummmmmmm…… a bit crispy on the outside, a bit chewy in the center….. they’re my favourite too!
