Orange Cranberry Muffins
Here I am, writing this nice post, enjoying a moment of solitude while H naps and what has to happen!? Well, since somebody decided to park in the snow bank in front of our house – specifically where the NO PARKING signs have been placed so that snow can be removed – the snow removal truck operator, in an attempt to get the driver to come out and move his car, won’t stop blaring his horn and waking up H!!!! I don’t like to use this blog as a forum for ranting (and I rarely will – promise), but COME ON! Sleeping baby. Do you know how precious that is (I address this to whoever owns that car)? MOVE YOUR BLEEPING CAR. Ok, I’m done now. Hope you enjoy these muffins. I’m too worked up to describe their yumminess, but I will say that they got two thumbs up from the hubby.
Ingredients:
1 3/4 cup flour
3/4 cup sugar
3 tsp baking powder
1/4 tsp salt
2 beaten eggs
1 cup milk
1/4 cup cooking oil
2 tbsp finely shredded orange peel
2 tbsp orange juice
In a large mixing bowl, combine dry ingredients. In another mixing bowl, combine eggs, milk, oil, peel and juice. Make a well in the dry ingredients and stir in egg mixture until just combined (batter will be lumpy). Fold in cranberries and spoon into greased muffin tins. Bake at 350 for approximately 25 minutes or until golden. Makes 12 large muffins. Enjoy!

Now to the good part. The muffins look like littile drops of heaven. I love how moist they look and I bet the taste is wonderful. Your family are lucky to have those muffins.
