Amazing White Chocolate Walnut Cookies

So yummy. These cookies will not last long – I promise. Although, they really should last at least a day or so, since the recipe makes about 4-5 dozen depending on how big you like your cookies. I might bring in a dozen or so to work tomorrow so I don’t devour them all at once. My hips will thank me later.


1 cup softened butter
1 cup  packed brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla
1 1/2 cup of flour
1 tsp baking soda
1/2 tsp salt
3 cups of quick cooking oats
1 cup of chopped walnuts
1 cup of white chips (or a mixture of your favourite)

Preheat oven to 325. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a  time, then stir in the vanilla. Combine flour, baking soda and salt in a separate bowl. Stir into the creamed mixture until just blended. Mix in oats, chip-its and walnuts. drop by heaping spoonfuls onto non-greased baking sheets. Bake for 12 minutes @ 325. Allow to cool for 5 minutes before transferring to a wire rack. Make about 4-5 dozen.
