Apple coffee cake

What a lovely weekend it is. The sun is shining, the air is crisp and the leaves bright and colorful. I love thanksgiving. Lots of food. Lots of family. These are my favorite things. This thanksgiving is a special one – it’s my son’s first thanksgiving and while he won’t be sampling the pumpkin pie this year, I’m just so happy to be sharing the holiday with him. From now on, holiday’s will take on a new meaning.

Some more favorite things:

The other day I made this yummy apple coffee cake. It’s seriously simple and delicious…try it.

Cake:
1 cup flour
1/4 cup brown sugar
1 1/2 tsp baking powder
1/4 cup butter
1 egg
1/4 milk

Topping:
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup melted butter
2 medium sized apples (sliced)

Combine ingredients for topping and set aside. Slice apples 1/4 inch thick. Combine flour, sugar and baking powder together. Cut butter into mixture. Beat egg with milk and pour, all at once, over dry ingredients. Stir quickly with a fork until just blended (batter will be lumpy). Quickly spread into an 8 inch square baking pan. Arrange fruit slices in rows over the batter. Spoon brown sugar topping over fruit. Bake at 400 degrees for 30-35 minutes. Enjoy!
