Apple Crisp

Don’t you just love lazy Sundays? No plans, no reason to leave the house and nothing much to do, but laundry and baking. This is my kind day. It’s chilly outside and I’m craving warm, comforting foods. For lunch I whipped up my favorite soup and then called my mom to ask for some specifics on her apple crisp recipe. Such a simple and delicious dessert. Soooo good served warm with vanilla ice cream. It’s sooo time for seconds.

Ingredients:
5-6 large apples peeled and sliced into wedges about 1/4 inch thick (I used granny smith, but normally I would use macintosh)
3/4 cup sugar
2 tsp cinnamon

Topping:
1 cup brown sugar
1 cup rolled oats
1/2 cup flour
1/2 cup melted butter

Combine sugar and cinnamon. In a large mixing bowl toss apples in sugar/cinnamon mixture. Pour coated apples into a medium sized baking dish (mine was 10 x 8 inches and 2 and a 1/2 inches deep). Combine brown sugar, oats, flour and butter until crumbly. Spread evenly over apples. Bake at 350 for 30 minutes until bubbly and golden. Serves 6-8. Enjoy!
